Serving: 1 crostone for each person - 4 servings
1. Fresh Italian Loaf of Bread: 4 slices (thicker than 1/2 inch)
2. Plum Tomatoes: 6
3. Fresh basil leaves: 6 torn into pieces
4. Garlic: 1 clove
5. Salt and Freshly Ground Black Pepper
6. Mozzarella cheese: 1 lb.
7. Extra Virgin Olive Oil
Cut the tomatoes and mozzarella cheese into small cubes. Seed the tomatoes. Season everything with basil, salt and
freshly ground black pepper. Barely cover the mixture with extra virgin olive oil and stir well. Leave for 20 minutes
before using with the bread.
Toast the slices of bread on a griddle. Divide the tomato and mozzarella mixture over the bread and serve at once.
